Randolph Breakfast Pizza

This is not your average pizza!

Ingredients

  • 1 premade pizza crust
  • 2 cups crumbed Randolph breakfast sausage
  • 2 cups frozen hash browns
  • 6 eggs lightly beaten
  • 1/3 cup milk
  • 2 cups shredded cheddar
  • 1 teaspoon salt
  • 2 teaspoons black pepper
  • 1/3 cup diced green bell pepper
  • 1/3 cup diced red bell pepper
  • 1/2 cup diced yellow onion

Directions:

Preheat oven to 375 F.  Cook sausage until fully cooked, breaking it up into bite size pieces. Drain fat and let cool.

Sprinkle cooked sausage evenly over pizza crust. Top sausage with potatoes; add peppers and onions. Sprinkle with cheddar cheese. Combine eggs, milk, salt and pepper in small bowl: stir well. Pour the egg mixture evenly over pizza (you might not need all of it). Sprinkle with extra cheese if desired.

Bake for 15-20 minutes or until eggs are set and crust is golden.
