In 1916, Angelo Carmignani left Lucca, Italy for the United States with the dream of a better life for his family. Following his vision of manufacturing authentic "Old World Style" ethnic sausage in the tradition of his ancestors, he founded Randolph Packing Co. in Chicago's famed Fulton Market district on Randolph and Sangamon Streets in 1928.


Today, Randolph Packing Co. is proud to still be family owned. The original facility has been relocated to a state of the art 10 acre campus just west of Chicago in Streamwood, Illinois. Here, Angelo's "Old World Style" manufacturing philosophy continues today.

    • Blending fresh, never frozen, pork or beef cuts to achieve desired fat to lean ratios, depending on individual product specifications.

    • Offering taste profiles developed for regional preferences.

    • Offering a variety of packaging or freezing techniques designed to improve shelf life and product stability.

    • Consistently offering our customers a quality product to match their marketing needs.

Randolph Packing Company's commitment to quality is displayed in its state of the art facility, literally a plant within a plant. The sausage manufacturing is conducted totally under refrigeration in an insulated enclosed building within the facility. All product is manufactured fresh daily. Retail product can be shipped fresh or frozen, while all food service product is frozen and shipped within five to ten days. Strict sanitation and quality control programs are maintained.

Randolph Packing Company is a Federally inspected USDA facility. All HACCP and strict second party sanitation audit procedures are met.

Randolph Packing Company considers all its products to be unique because of the personal way in which they are manufactured.

Randolph Packing Company distributes a high quality line of fresh and frozen, "Old-World Style" ethnic sausage, specialty sausage and sausage related products, (including meatballs, toppings and Spanish style favorites) to the retail and food service industries.

Randolph Packing offers private label programs developed especially to suite the needs of multi-unit food service organizations and retail chains. Our nationally recognized proprietary labeled products ("Randolph Brand", "Papa Carmignani's Preferred", "Randolph Market", and "Porky's Last Stand") are currently available, supported with extensive merchandising programs.
